Nut Milks

Do you buy almond milk? Ever thought of making your own nutritious nut milk? It’s easier than you may think. Soaking nuts and seeds starts the germination process and neutralizes the enzyme inhibitors, thus making them easier to digest. The harder the nut or seed, the longer it needs to be soaked.

Almond Milk
Ingredients
1 cup raw almonds (soaked for 8 hours and well rinsed)
4 cups filtered water
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract
2 Tablespoons golden raisins

Directions
Place all ingredients in a high-speed blender. Blend on high until all liquid. Filter through a nut milk bag or mesh that can filter out the small almond and raisin bits, or you may leave it unfiltered for pouring on cereal. Keep refrigerated, and use within 2 days. Blend in raw cacao and frozen berries for a great treat! Yields 4 cups

Brazil Nut, Hemp Seed and Sesame Seed Milk
Ingredients
1/4 cup raw brazil nuts or raw macadamia nuts (soaked for 8 hours and well rinsed. Brazil nuts do not need to be soaked.)
1/4 cup raw sesame seeds (soaked for 4 hours and well rinsed)
1/2 cup raw hemp seeds (hemp seeds do not need to be soaked)
4 cups filtered water
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1 teaspoon maca
1 tablespoon raw coconut nectar

Directions
Place all ingredients in a high-speed blender. Blend on high until all liquid. Filter through a nut milk bag or mesh that can filter out the small bits of nuts and seeds. Keep refrigerated, and use within 2 days. Yields 4 cups
